Trust and Company Bar & Restaurant To Open

MOCKUP

Trust & Company Bar & Restaurant (www.trustandcomiami.com) located at 2 Aragon Avenue in Coral Gables is scheduled to open this fall. The much anticipated eatery and refined bar spot is the brainchild of restaurateur Jerry Flynn. He describes Trust & Co. “as a neighborhood upscale-casual bar and restaurant inspired by the trust and integrity of the early 20th century.”

Flynn says the restaurant’s menu will feature food made from the finest local ingredients: from produce to bread, cured meats, eggs, cheese and seafood.

To complete this mission, Flynn has tapped Chef Pablo Zitzmann to lead the kitchen team for Trust & Co.

Chef Zitzmann has a broad culinary knowledge that includes Contemporary, Classic French, Japanese, Latin and New American Cuisine to mention a few. Having worked alongside renowned culinary masters Zitzmann has honed his skills in multiple positions at the Edition Hotel, Matador Room, Market and Tropicale Restaurants by Jean Georges, Senora Martinez by Michelle Bernstein and Nobu, among others.

Trust & Co’s menu will change with the seasons to maintain the mission of utilizing fresh local ingredients. Flynn says the opening fall menu will feature braised meats, hearty preparations, roasted vegetables and carefully crafted sweets.

One of these signature dishes is the Spice Encrusted Duck Breast rubbed with toasted fennel and coriander seeds, served with fresh seasonal roasted and shaved turnips, northern pomegranates, Virginia country ham and mint.

Trust & Co. will serve lunch, dinner, weekend brunch, and a late-night menu while offering a happy hour from Monday through Friday, 4 pm to 7 pm.
