Each year when August 1 comes around, we know Chef Peter Vauthy is going to go all out for Miami Spice. At Red, the Steakhouse, his menu is one of the few that changes regularly, giving customers a reason to come back again and again during the two-month affair. Having tried Miami Spice here last year, we knew we were in for a treat during our latest Spice preview. And indeed we were.

Chef Vauthy believes in big portions. Each time we visit, you practically have to roll us out into the street and carry us to our car. This time was no different. Our preview dinner let us try a bit of everything offered in the first month of Miami Spice. Divided into four weekly menus, Red’s August offerings include a Classic Steakhouse Menu, a Seafood Menu, an Italian Menu and a Greatest Hits Menu.

The Classic Steakhouse Menu, which kicks off Spice’s first week, features starters like bacon wrapped tater tots and flash fried lobster tail, both of which are hearty and offer plenty of flavor to whet the palate. Mains include a petite filet mignon and meatball pasta, which absolutely need to be accompanied by Red’s famous four-cheese macaroni and cheese. Two dessert options round out the menu: peanut butter pie and caramel bread pudding.

In Week 2, the Seafood Menu, expect starters like mussels diavolo and tuna poke to set the bar high for the rest of your meal. Flash fried snapper and the lobster fra diavolo (our personal favorite) are available as mains along with steak and chicken offerings for non-seafood fans. As for dessert, lemon Meringue and pineapple carrot cake ensure a sweet ending to your Spice meal.

Nobody makes Italian food like Chef Vauthy. We’d be happy eating his pastas and meatballs forever. That’s why we can’t recommend Week 3 enough. The Italian Menu includes his famous house made meatball (whipped ricotta and red sauce) and stars like a seared snapper ricotta and shrimp scampi. Thankfully, this week’s desserts are light to balance the heft of the starters and mains: strawberry panna cotta and torta caprese.

In Week 4, Red, the Steakhouse finishes with a Greatest Hits Menu comprised of customer favorites like Brad’s stuffed hot peppers and BBQ pork belly (a $10 upgrade) for starters and wild Atlantic salmon and Ashley Farms chicken for entrees. Multiple upgrades are available including C.A.B. Prime options for the steaks as well as first and second course upgrades (like the pork belly above). The final dessert course brings back the first week’s desserts for one last hurrah.
