Last month, the Loews Miami Beach Hotel completed a $50 million renovation that included fully redesigned guest rooms, a new pool deck, an updated lobby, and several new food and beverage offerings. Among the new additions: Bar Collins, a complete revamp of the hotel’s lobby bar.
If you ever had a chance to experience the hotel’s original lobby bar, you’re in for a surprise. Bar Collins sheds any resemblance to its predecessor by offering both an indoor and outdoor experience. Grab a seat and get ready to sip on drinks from local favorite Julio Cabrera, who helmed the programs at Regent Cocktail Club and Ball & Chain. The Bar Collins Bar Director has crafted a Miami-inspired list of cocktails to savor in the beautiful new space.
The Zacapa Old Fashioned, which swaps bourbon for Zacapa 23 rum, was one of our favorites while checking out the hotel; rum old fashioneds are our Kryptonite. Another standout was the Cucumber Ron Collins, which features Flor de Cana rum along with cucumber and lime juice plus a few other goodies (#refreshingAF). Although rum is the spirit you’ll encounter most at the bar, the expansive menu ensures that nobody in your party feels left out.
On the food side, Loews Miami Beach Executive Chef Frederic Delaire is also creating some Miami-inspired plates to fit the new ambiance. Cuban Pizza (ham, pork, swiss cheese, yellow mustard and pickles) is a mouthful of flavor, while smaller plates like Cuban sliders and Ahi Tuna Tartare are easier on the waistline but just as filling. Bar Collins is open for lunch and dinner, so you can get your food fix day or night. Our parting advice: Clear your schedule — you won’t want to leave.
