On March 26, nearly 500 attendees gathered to watch five chef teams duke it out at the ultimate pork feast inside The Ritz-Carlton, South Beach. Cochon555, a national tour promoting global food cultures and family farming, treated guests to over 1,500 pounds of heritage-breed pork and plenty of adult beverages throughout the 3-hour affair.
Each of the five competitors was given a 200-pound whole heritage-breed pig and one week to create a selection of dishes for judges and attendees to savor. The evening’s roster:
– Chef Clark Bowen and Chef Rick Mace of db Bistro Moderne & Café Boulud Palm Beach
– Chef Tito Vargas of The Bazaar by José Andrés
– Chef Paula DaSilva of Artisan Beach House
– Chef Jeremiah Bullfrog of gastroPod
– Chef John Gallo and Rene Reyes of Pinch Kitchen
In the end, Chef DaSilva took home the event’s top honor, landing her a spot in the national finale — Grand Cochon — in October. Although pork is the star of Cochon555, ticket holders also had access to an extensive selection of pop-ups including a bakery by La Brea, a salami snack bar from Creminelli and Divina, and a ramen bar helmed by Drunken Dragon’s Xavier Torres. Did we mention alcohol? Brands like Breckenridge Bourbon, Angostura, Courvoisier and Heritage Rum kept glasses full with tasty spirits.
