#RaiseItForward at 1 Hotel

On World Water Day, March 22nd, the world turns its attention towards the billions of people who lack access to safe drinking water. 1 Hotel South Beach has partnered up with Absolut Elyx and Water For People in their #RaiseItForward month-long initiative. How can you help? Post a picture holding any Absolut Elyx specialty cocktail with the hashtag #RaiseItForwad and tag @Absolutelyx, @Waterforpeople and @1hotels.

Available at Habitat, Drift (the hotel lobby bar), Plnthouse and the rooftop. For every post shared using the hashtag, Absolut Elyx will donate a week’s supply worth of drinking water to the Water For People charity. If the goal of 10,000 posts is met, Absolut Elyx will increase the donation to a month’s worth of safe drinking water per post.

Hiyakawa to Open in Wynwood

This fall, Miami welcomes a vivid expression of Japanese cuisine—Hiyakawa. From Chef Shuji Hiyakawa of Wabi Sabi by Shuji, and restaurateur and art dealer Alvaro Perez Miranda, who launched the Vagabond Restaurant & Bar, the intimate 28-seat Hiyakawa will be grounded on seasonality, simplicity, and “omotenashi” the traditional Japanese notion of hospitality delivered through refined and intricate customer service.

The menu will embrace the wide world of Japanese cuisine, featuring seasonal ingredients and dishes including agemono (deep-fried dishes), yakimono (grilled or pan-fried), shirumono (soups), zensai (appetizers), and sushi along with sake, beer, and wine. Hiyakawa will also offer a $100-per-person omakase menu, with chef selections from each category.

A portion of the Hiyakawa space will also be dedicated to another Wabi Sabi serving Donburi (a Japanese rice bowl dish consisting of fish, meat, vegetables or other ingredients simmered together and served over rice), however, chef will prepare only 100 bowls per day for lunch Monday – Friday, therefore first-come-first-serve. The plan is to create an after-hours dining club offering the chef’s creations of specific Japanese dishes he is passionate about which will change nightly.

Another Wabi Sabi will open at Lincoln Road’s forthcoming Time Out Market.

Cochon555 Returns on May 19

Cochon555, the nation’s acclaimed culinary, wine and spirit event in celebration of local family farming and whole pig cookery, is celebrating ten years during its 2019 nationwide tour. The tour returns to Miami on Sunday, May 19th featuring five local chefs battling it out to be named Miami’s “Prince/Princess of Pork” and represent Miami at the grand finale, Grand Cochon, in Chicago on September 15, 2019.

The five chefs will have one week to prepare a 200-pound heritage breed pig and create a masterful menu to present to guests and notable judges during the event. They will be judged and win votes from the audience based on utilization, technique, and overall flavor.

Running in tandem with the culinary competition are a pair of beverage competitions. Punch Kings presented by El Tesoro Tequila, is a whole bottle spirit competition featuring the city’s top barkeeps in a hand-crafted punch challenge and Somm Smackdown is a face-off of the nation’s top sommeliers pairing the best wine with heritage pig dishes.

Every event is a fundraiser for Cochon555’s sister charity, Piggy Bank; a start-up farm in Missouri that serves as a kickstarter for new family farms and a safety net for those in the wake of a disaster (flood, fire and disease).
