Chef Josh Gripper Raises the Bar at The Dutch

We’re no strangers to The Dutch, the cool American restaurant inside W South Beach. Over the years, we’ve popped in for Miami Spice, summer barbecues and a bevy of other special events. It’s been a while since our last visit, though, and things have changed for the better since Chef Josh Gripper took over as Executive Chef late last year.

His name should be familiar to anyone who knows anything about the local food scene. He oversaw the pastry program at The Dutch and is now trying his hand at savory fare — with fantastic results.

Full disclosure: Our visit coincided with the tail end of this season’s menu. By the time you make a reservation, odds are some things — or many things — might be different. With that said, we don’t see our conclusion changing: Chef Josh Gripper is creating some amazing dishes. Selections like the Crab-Stuffed Deviled Eggs and Grilled Octopus with ‘nduja vinaigrette are not to be missed, as they’re brimming with flavor. Entrees like Smoke Ricotta Pasta, Red Snapper and Jerk Pork Chop (Coca Cola rice ftw) overshadowed anything we ate during our previous visits; complemented with tasty  (and healthy-ish) sides like Broccolini and Brussels Sprouts, these plates had us in heaven.

Unsurprisingly, dessert didn’t disappoint. It’s a tough choice between the Cuban Flan with blood orange sorbet and the Chocolate Peanut Crunch with vanilla chantilly, so just say f— it and get both. Honestly, just throw caution to the wind and get the whole menu — we would if we had two stomachs. To say our latest Dutch experience was enjoyable would be an understatement. Chef Josh Gripper has truly transformed the restaurant and we look forward to seeing what else he comes up with. Keep an eye on this place.
