New Summer Menu at Casadonna
Casadonna’s Executive Chef Hugo Bolanos has introduced new summer dishes and cocktails to be enjoyed all season long. Highlights include Squash Blossoms (black truffle honey, parmigiano reggiano, Italian ricotta), a Chilled Summer Salad (zucchini, cherry tomato, local corn, arugula, citrus vinaigrette), Burrata (heirloom tomato, peach mostarda, white balsamic, basil oil), Rosso Tagliolini (maine lobster, cherry tomatoes, parsley), Caramelles (summer truffle, corn, ricotta and parmigiano reggiano), and Chicken Diavolo (bullseye cippolini, calabrian chili). Guests can also enjoy a memorable and refreshing Sgroppino Cocktail for Two, prepared tableside with vodka, prosecco and lemon sorbet.
Additionally, Casadonna has introduced a new dessert in partnership with snack company SkinnyDipped – the Delizie al Limone 2.0, featuring SkinnyDipped lemon bliss bigne, sorbetto limone, and biscotti di limone. Presented to appear as two lemons, the Instagrammable, eye-catching optical illusion surprises and delights guests who break into the dessert to taste something completely different with flavors of white chocolate mousse and pistachios.
For larger parties, Casadonna presents this sweet masterpiece tableside with a lemon tree from which fresh “lemons” are plucked for an interactive element to the dining experience. This season, Groot Hospitality’s Corporate Pastry Chef Tiffany Pascua is incorporating SkinnyDipped Lemon Bliss Almonds, coated with a thin layer of lightly sweetened yogurt and then spritzed with real lemon, drawing inspiration from the Amalfi Coast and sweet, sunny summer days.

Secret Menu at Bourbon Steak
Bourbon Steak Miami, the signature restaurant at JW Marriott Miami Turnberry Resort & Spa, is pulling back the curtain for a glimpse of its coveted secret menu – a short list of exclusive off-menu dishes waiting to be discovered. For some time, guests “in the know” have been ordering and enjoying these otherwise undisclosed offerings, all they had to do was ask.
Conceived by Executive Chef Mario Beabraut to reflect Bourbon Steak’s vibrant atmosphere and modern aesthetic, the secret menu adds a new dimension to the nationally acclaimed American steakhouse, and a unique take on the distinctive dishes from Bourbon Steak’s creator, James Beard Award-winning Chef Michael Mina.
“Our most frequent guests have been let in on the secret in the past when we featured a limited and rotating curation of dishes that could be requested, but nothing formal was in place,” says Chef Beabraut. Now, we’ve taken it to the next level with a menu that’s the result of an incredible collaboration between our talented kitchen and bar team, who were inspired to come together and explore their creative sides collaboratively.”
Guests who ask for the “secret menu” will find such innovative dishes as Spicy Wagyu Beef Lettuce Cups featuring little gem lettuce, pickled carrots and cilantro; Salmon “poppers” with sesame, crispy rice cakes and Togarashi aioli; Hay Smoked A5 Skewers with miso, asparagus, Yuzu Kosho aioli; the Wagyu Burger with short rib marmalade and heirloom tomato and served with Truffle fries, as well as other seasonal inspirations.
The secret menu pairs perfectly with Bourbon Steak’s newest cocktail creation, the A5 Fat-Washed Old Fashioned. Already a fan favorite, the “A5 Fat-Washed” is made by infusing A5 wagyu beef fat into premium bourbon, providing a smooth and savory libation that can only be found at Bourbon Steak Miami.

Coming Soon to Wynwood: Pasta
Miami’s vibrant Wynwood district is set to welcome an exciting new dining destination this July with the opening of Pasta, a modern Italian eatery helmed by renowned Peruvian chefs Juan Manuel Umbert and Janice Buraschi. Following the resounding success of their original location in Lima, Peru, the husband-and-wife team is bringing their celebrated take on traditional Italian cuisine with their first stateside outpost, promising a unique culinary experience that merges the rich flavors and techniques of Italy with subtle influences from their diverse culinary journeys. The intimate, 2,400-square-foot space will seat 77 guests with an open kitchen emphasizing the restaurant’s commitment to transparency and culinary artistry.
The menu showcases a selection of tried-and-tested recipes that pay homage to classic Italian cuisine while innovative starters and desserts incorporate nuances of the chefs’ heritage and global experiences. The Razor Clams with Salsa Verde and House-made ‘Nduja starter is inspired by the flavors and nautical freshness that is Miami, while the Veal Sweetbread with Peruvian potatoes and Aceto di Modena and House-made Stracciatella with Sourdough Bread embody the quality and creativity that made Pasta one of Lima’s hit restaurants.
At the heart of the menu are selections of fresh, homemade pasta offerings. More traditional comfort can be found in the Pici Cacio e Pepe and Pappardelle with 12-Hour Braised Beef Cheek Ragú, while adventurous palates will gravitate towards inventive combinations like a Fettuccine with housemade ‘nduja, mascarpone and lime. For those seeking a truly unique taste, the Agnolotti di Funghi highlights a 36-month Parmigiano Reggiano that offers a burst of flavor in every bite utilizing a technique that Chef Umbert learned in New York, which he describes as having the sauce inside the pasta.
Chef Buraschi rounds out guests’ savory experience with exquisite desserts. Highlights include a selection of Housemade Gelati, a Sicilian-inspired Pistachio di Bronte Tart and a Coffee Crema Volteada, Peru’s version of a traditional flan packed with a rich Peruvian coffee-caramel flavor. Additionally, a stellar beverage program complements the culinary offerings with a full bar and curated list of classic Italian wines and cocktails that highlight a variety of Negronis and Spritzes.
