World-renowned Chef Massimo Bottura ushers in an era of Italian cuisine that embraces modernity, newness and change with the opening of his first solo project in the United States, Torno Subito Miami, in partnership with King Goose Hospitality.

Widely regarded as one of the world’s best chefs, Bottura has entrusted Bernardo Paladini—the creative force behind Torno Subito Dubai’s inaugural Michelin star—to lead Torno Subito Miami as Head Chef.

Each dish tells a unique story, taking guests on a culinary journey that reflects the restaurant’s core value of combating food waste. This is evident from the first dish, Pappa al Pomodoro, made with day-old bread, tomato, and Parmigiano Reggiano foam.

The experience continues with appetizers like the Modern Salad, which transports guests through Modena, Dubai, and Miami by combining key ingredients from each city, and I Love Tartar, which gives diners the autonomy to step into the chef’s role and create their own dish.

Drawing from his traditional roots, Paladini presents classic pasta dishes like Spaghetti Ai 3 Pomodori, spaghetti pasta with San Marzano, Datterino and Piennolo tomatoes and fresh basil; Cacio e Pepe, spaghetti alla chitarra, pecorino cheese, black pepper and orange essence; and La Carbonara, spaghettoni, guanciale, egg yolk, pecorino, black pepper.

The menu also features the iconic Emilia Burger, a signature dish on many Francescana Family menus, inspired by the Emilia-Romagna region. This playful dish provides a fresh take on the American classic by infusing Parmigiano Reggiano cheese and balsamic vinegar into a patty made with beef rib eye and cotechino.

To enhance its culinary offerings, Torno Subito features an extensive artisanal wine list, highlighting exceptional selections from renowned producers alongside gems from smaller local vineyards. Standouts include Paltrinieri Solco Lambrusco di Sorbara 2022, a rich, fruity red wine typical of Emilia Romagna, and Castello di Luzzano Tasto di Seta. The latter is a unique find, available exclusively at Torno Subito Miami and not offered at any other restaurant in Florida.

As for cocktails, the rooftop restaurant has partnered with 2019’s World’s Best Bar, Dante, for an unprecedented collaboration where American cocktail culture meets Italian tradition for a dining experience that transcends cultures and borders – a nostalgic journey where ‘everything old is new again.’

Now Open: MOMENTO by Ikaro

This Friday, August 16, the critically acclaimed culinary couple Carolina Sanchez and Iñaki Murua, behind the Michelin-starred Ikaro in La Rioja, Spain, unveil their first U.S. outpost with the debut of MOMENTO by Ikaro in Miami. Nestled in Downtown, this charming alfresco restaurant blends their rich culinary origins from Spain and Ecuador with Miami’s dynamic energy offering guests an immersive dining experience where traditional influences harmonize with contemporary culinary creativity.

Utilizing a state-of-the-art wood oven and the finest seasonal elements, the 25-dish menu includes the following highlights: Amazonian Tiradito cured and smoked hamachi with Ikaro’s signature, smokey neapia sauce and fresh salsa; wood-fired Basque-Style Turbot cooked with garlic and vinegar-infused olive oil, and paired with baked potatoes; Glazed Boneless Short Rib slow-cooked in a wood-fired oven with tamarillo BBQ sauce and served with lemon and mint quinoa salad; Roasted Neapia-Marinated Cauliflower with brown butter sauce (neapia is a traditional Amazonian condiment made from cassava starch and chilies); Ikaro’s famed Espuma de Abatonca (translating to tonka bean foam), with salted caramel ice cream, Ecuadorian chocolate crips and agave; and the Basque-style Lotus Cheesecake made with Biscoff cookies.

Chefs Murua and Sánchez seamlessly blend their professional and personal lives after meeting at the renowned Basque Culinary Center. Chef Sánchez pursued her education at the University of Cuenca in Ecuador and Le Cordon Bleu in Peru. She later advanced her expertise with a Master’s in Cooking at the Basque Culinary Center and interned at El Celler de Can Roca (three Michelin stars).

Four Seasons Hotel Miami Welcomes New Chef

With a global journey spanning Paris, Melbourne and the Maldives, Chef Edouard Deplus, a master in French culinary arts with a passion for locally sourced products, joins Four Seasons Hotel Miami as Executive Chef, overseeing the Hotel’s rooftop Edge Brasserie and Cocktail Bar and poolside restaurant Bahía as well as special events and in-room dining.

“The culinary scene in Brickell and Miami is truly energizing, and I am excited to become part of it as I join this extraordinary team,” says Deplus who has been visiting Miami for many years and has always loved the city.

A native of Paris, Deplus’ deep love for food ignited at a young age, inspired by the family dinners and three-course meals prepared by his mother and grandmother. “This is when I fell in love with cooking,” he says. “I was fascinated by the effect it had on people, bringing joy and sharing memories around the table.” At just 15, he landed a summer job in a Parisian brasserie that confirmed his true calling. Deplus was drawn to the energy of the kitchen and dining room, leading him to follow his dream to study culinary arts at the premier Paul Bocuse Institute in Lyon, France.

After a promising start in Paris alongside Michelin-starred Chef Yannick Alleno at Le Meurice and several renowned Parisian brasseries, Deplus’ passion for travel and exploration took him to Australia, where he worked with acclaimed Chef Philippe Mouchel, known as Australia’s favorite French Chef. His culinary journey continued back to Europe, with time at La Dama in Barcelona and Maison Nô in Lyon, before his adventurous spirit led him to French Polynesia, then the Maldives marking his first tenure with Four Seasons.

Deplus’ inspiration draws not only from his upbringing in the French capital and his early dive into the culinary realm with celebrated chefs but also from his extensive travels and the encounters with diverse culture and local craftspeople. In Miami, Chef Deplus will renew Edge Brasserie’s menu infusing his traditional French techniques while sourcing local ingredients from nearby farms and producers, set to be introduced in Fall 2024.

“The local markets and the diversity of unique ingredients and eccentric flavors are all shaping my vision for the Hotel’s culinary program, adds Deplus. “I want to capture the vibrancy of Miami and bring something new with a French touch, that will resonate will locals and visitors.”

Welcoming Chef Deplus to the community, Giorgio Rapicavoli, the acclaimed chef and owner behind beloved Miami staples, Eating House and Luca Osteria, will join Edge Brasserie and Cocktail Bar on Saturday, August 31st for an exclusive collaboration dinner, and an exciting opportunity to preview Chef Deplus’ creations alongside the innovative dishes that have made Chef Rapicavoli a favorite among Miami chefs.

The epic eight-course prix-fixe menu will feature a progression of sharable dishes presented by both chefs. The evening will begin with Oysters served with Frozen Passion Fruit, Lime and Avocado; and Toasted French Toast with Wagyu Tartar and Shaved Parmesan. Two pasta presentations are next including Risotto ‘Marsala’ prepared with Mushroom, Aged Parmigiano and Truffles, and Squid Tagliatelle “Carbonara” with Quail Egg, Chives and Truffle.

Main courses will feature Pan Seared Sea Bass accompanied with Yuzu Braised Fennel and Puree, Brown Butter Vierge sauce and Mouclade Emulsion; and Grilled Wagyu Beef with Black Chimichurri and Pickled Onion Rings. The meal will conclude on a sweet note with Tropical Fruit, Coconut Sorbet, Vanilla Chantilly and Key Lime Meringue; and Traditional Ile Flottante served with crème anglaise, toasted almonds and caramel sauce.
