New Cocktail Menu at The Sylvester

The Sylvester is shaking things up as the beloved Midtown bar known for its retro vibes, maximalist mischief and anything-but-boring drinks has debuted a brand-new drink menu. Built around the classics people can’t stop ordering (martinis, spritzes, margaritas, highballs), each reimagined with a distinctly “Florida man” twist, the drinks are familiar at first glance, but playful, tropical and a little unhinged once you dig in.

The new lineup features 10 original cocktails alongside two Sylvester staples that guests already know and love: the spicy passion fruit margarita Vaxxxed & Waxxxed, and the clarified cult classic Albino Gator. Together, the menu strikes a balance between approachability and creativity with classic structures, Florida flavors and just enough personality to feel unmistakably Sylvester.

Every cocktail begins with a familiar framework, the kinds of drinks guests already love ordering, then gets reworked with Florida ingredients, tongue-in-cheek names and high-level techniques like clarification and carbonation. As The Sylvester evolves into a higher-energy, club-like destination on weekends, the new menu is designed to deliver complex, thoughtful cocktails at volume, keeping service seamless while the dance floor fills up. The goal is to push creativity without sacrificing speed, consistency or hospitality.

Some of the new lineup includes:

Only in Dade ($18) – A guava pastelito-inspired cocktail built around Zacapa rum, guava and mascarpone foam.

B.B.L Martini ($18) – Short for “Better Basic Lychee Martini,” this martini blends Grey Goose vodka, lychee, coconut and local JoJo jasmine tea for a floral, subtly tropical take on the fan favorite.

Cream Team ($19) – The bar’s playful spin on an orange creamsicle highball with Tanqueray gin, tangerine, vanilla, caramel and yogurt, clarified and carbonated for a silky, sparkling finish.

Not a Tomatini ($17) – An ode to the team’s favorite restaurant bar’s iconic Tomatini, reimagined the Sylvester way with The Botanist gin, strawberry, tomato and balsamic.

Vice City ($17) – Santa Teresa 1796 rum meets raspberry, cafecito, cacao and lime in a drink that tastes like Miami.

305 Day at The Salty

On March 5, The Salty celebrates its home town with all coffee priced at $3.05. Guests can choose from the variety of options on The Salty’s menu including specialty drinks such as the Cinnamon Cereal Milk Latte and Maple & Brown Sugar Cold Brew or classics including espresso, Americano, cortados and more. The promotion will be available at The Salty’s Miami locations – Coconut Grove, FIU, South Miami and Wynwood and will be offered for walk-up orders as well as on The Salty app.

 

Cocktails & Chocolate at The Commodore

Cocktails & Chocolate at The Ritz-Carlton Coconut Grove, Miami’s beloved bar, The Commodore, offers an indulgent take on a classic after-dinner tradition, pairing spirits and chocolate in a composed cocktail experience available through April 30.

In collaboration with Calle Ocho chocolatier Exquisito Chocolates and curated by Gio Gutierrez of @chatchowtv, a trio of expertly crafted cocktails showcases how handmade chocolate can enhance and balance the character of premium spirits. Cocktails & Chocolate options include the Arabica Fizz, a lively, layered cocktail combining Santa Teresa 1796 Arabica Cask Rum with Cointreau, cacao shell syrup, cranberry bitters, ginger beer, and tonic.

The White Chocolate Negroni offers a softer interpretation of the classic, blending Bombay Dry Gin, Noilly Prat Dry, Luxardo Bitter Bianco, crème de cacao, and chocolate bitters, finished with a chocolate-dipped citrus wheel that balances bitterness and sweetness.

Rounding out the trio, the Salty Chocolate Bourbon combines Angel’s Envy Bourbon and D’Ussé Cognac with maple syrup, chocolate bitters, and Angostura bitters. The cocktail is finished with a sea salt-sprinkled chocolate sphere, which guests are invited to playfully crack with a small mallet. For more information, please visit here.

 

Bubbles & Bites at Toro Toro

Guests can enjoy quick indulgence and bold flavors at Toro Toro with Bubbles & Bites. With this exclusive special, guests can chill with a sparkling glass of Veuve Clicquot bubbles and a truffle artisan flatbread and savor the simple, indulgent pairing. The Bubbles & Bites pairing is $29++ per person and is offered seven days a week. This offer is valid at Toro Toro bar, lounge and Spindle.
