Fuku Expands to West Palm Beach
Fuku, the quick, chef-driven eatery from chef and cultural icon David Chang known for its signature spicy fried chicken sandwich, is continuing its South Florida expansion with a new location planned for West Palm Beach, set to open in Summer 2026. The announcement follows the brand’s recent debut in Coral Gables, marking its first standalone restaurant in Florida. The forthcoming restaurant will be located at 407 S. Rosemary Ave., West Palm Beach, FL.
West Palm Beach represents a natural next step for Fuku’s growth, bringing its signature sandos and bold, flavor-forward approach to a new audience in Palm Beach County. Additional details, including the opening timeline, will be announced at a later date.
“South Florida has been an exciting market for us, and the response so far has reinforced that there’s a real appetite for what Fuku does,” said CEO Claudia Lezcano. “West Palm Beach allows us to continue that momentum in a way that feels intentional to the community and aligned with how we’re growing the brand.”
Originally launched as a secret off-menu item at Momofuku Noodle Bar in New York City, Fuku has evolved into a nationally recognized concept known for its craveable fried chicken sandos, layered flavors and chef-driven approach to fast casual dining. The brand currently operates 15 locations within major stadiums, arenas, and ballparks across the U.S., in addition to its standalone restaurant in Coral Gables. The West Palm Beach location will build on that foundation while reflecting the energy and character of its new neighborhood.
Guests can expect the core elements that define Fuku, from its craveable sandos and hand-breaded chicken to its playful, high-energy atmosphere. As with its Coral Gables location, the West Palm Beach outpost will introduce a slightly elevated experience tailored to the market.
Opening Soon: Solei Beach Club
South Florida’s chic new spot for sipping, savoring, and soaking up the sun — Solei Beach Club — will open its sun-dappled doors on Saturday, May 16, 2026. Located at South Beach’s exquisitely renovated Art Deco boutique hotel, Kimpton Surfcomber Hotel, Solei is designed to deliver an experience inspired by the chic, effortless spirit of coastal Spain, blending the Mediterranean’s laid-back charm with South Beach’s signature buzz. Ocean-facing, Solei will be the perfect new spot for a midday respite, lunch with friends or family and golden hour cocktails with sustenance and sips springing from a selection of shareable plates, crisp wines, and creative cocktails.
Solei Beach Club offers an open to the public experience, transporting guests to the Spanish Riviera with a casually sophisticated atmosphere, including plush seating arrangements and dining tables beneath a thatched palapa, all awash with the sound of the nearby ocean. Rest assured, the setting at Solei won’t be the only star. The robust menu, rooted in quality ingredients, is designed for sharing, starting with Raw Bar featuring oysters, ceviche, octopus carpaccio, and a decadent “Seafood Colosseum” – oysters, Caribbean lobster, P.E.I mussels, Quahog clams, and ceviche du jour with caviar or stone crab add-ons for a soupcon of luxury.
An array of “Pintxos” (small snack or appetizer), include selections such as such as a mezze board resplendent with pimento hummus, cilantro tzatziki, pistachio-mint whipped feta, falafel, crispy halloumi, chargrilled artichoke and eggplant, Marcona almonds, herbed olives, and pita points. Oxtail empanadas, Spanish-style shrimp, and Malta-lime chicken wings are also great for shared bites.
The creative mind behind the menu is Executive Chef Gastón Javier Sanchez. He offers, “My inspiration for the Solei Beach Club experience is rooted in the spirit of the Mediterranean—its rich diversity, vibrant culture, and timeless sense of enchantment—fused seamlessly with the energy and flavors of South Florida. It’s about bringing that global coastal essence right here to our Miami Beach backyard, creating something that feels both transportive and deeply local.”
His expertise shines most brightly with signature large dishes, from shrimp and chicken paella to tahini salmon – Yin Yang sesame-crusted wild salmon with herbed tahini, green mint oil, pomegranate tendrils, Pinoli nuts, golden spiced cauliflower, Aleppo pepper, and fleur de sel.
Perfect for summer, or any season are dishes like watermelon chess salad, lobster roll, and a variety of pizzas. The Basque-style pistachio cheesecake and Key Lime pie are highlights of the not to be missed dessert offerings.
The bar program is also top-notch, serving up refreshing handcrafted cocktails with coastal flavors. Signature pours here offer a balanced mix of emboldened classics such as Spicy Señorita (Mezcal and Tequila Blanco) and the Italian Margarita (Campari and Cointreau). Tropical notes can be found in the Ibiza Sunset with its blend of strawberry, passionfruit and fresh lime, and in the refreshing elegance of the Gin Mare. Solei’s top signature cocktail — the refreshing, frozen Passion Du Solei – includes Bhakta “Surfcomber’s Private Blend.” Classics with elevated twists will surprise, such as the Paloma Real and An Evening in Barcelona, adding sophistication and familiarity. An array of carefully curated wines perfect for outdoor sipping, spirits and beers are also available.
Those looking to make the most of their Solei sojourn can reserve a luxury cabana. A true poolside sanctuary, the Cabanas at Solei are the perfect retreat for friends, families and celebrations. From birthdays, bachelor and bachelorette parties to casual gatherings, the lush, shaded cabanas deliver the comfort of a private poolside suite, complete with plush lounge seating, big-screen TVs, and pool and direct beach access. Spanning 11,500 square feet of charming poolside real estate, Solei Beach Club seats 75.
Solei Beach Club is located at 1717 Collins Avenue at the Kimpton Surfcomber Hotel on Miami Beach. Hours of operation: 11 a.m. to 5 p.m. daily; the bar is open daily until 6 p.m.
