Although diners bid farewell to Shelborne South Beach’s Sarsaparilla Club last year, Top Chef stars Jeff McInnis and Janine Booth — the couple behind the American dim sum restaurant — aren’t done saying goodbye to the hotel property: They’ve now opened a popup of their beloved New York eatery Root & Bone, giving guests plenty of reasons to salivate.
When it was first announced that Jeff McInnis and Janine Booth of Top Chef were opening a new restaurant inside the old PB Steak space, we started counting the days until its arrival. Now that it’s officially open for business, we’re happy to report that Stiltsville Fish Bar was well worth the wait.
The day is finally here: Stiltsville Fish Bar is open! The seafood concept from culinary powerhouses Jeff McInnis and Janine Booth is ready to welcome patrons for a relaxed, delicious dinner. This past summer, we got a preview of Stiltsville’s offerings at the actual Stiltsville, and if that was any indication, the restaurant should already be firing on all cylinders out of the gate.

Having really enjoyed Morimoto at the Shelborne Wyndham Grand, we were bummed to see it shutter last September. Thankfully, its replacement has made that loss a very distant memory. Chefs Jeff McInnis and Janine Booth, no strangers to Miami, have made their way back to the Magic City to open The Sarsaparilla Club in the Iron Chef’s former space. An American dim sum concept, it’s the first of two restaurants the couple plans to open in the 305. If our recent experience at The Sarsaparilla Club was any indication, the duo is already 1 for 1.
